One of my favorite desserts is a sweet and tart cheesecake. But it can’t be any cheesecake! It has to be my family’s no bake cheesecake! This recipe is one my Mom always made for my Dad as it was his favorite dessert. I have no idea where it originated. She’s been making it far longer than I have been alive. It is very simple to make and is  full of flavor! It is the perfect blend of sweet and tart. I have yet to find someone who does not like it (except my husband who is a health nut and says it tastes good but is too rich for him..lol). In fact I have had many people tell me that they don’t like Cheesecake. But they happen to love my Sweet and tart cheesecake. So it is a golden recipe even among the critics.

Our family no bake Cheesecake recipe is super easy to make. It consists of the Crust, the filling and the toppings. And it takes very little time to make all three. Let’s begin with the crust.

Easy Cheesecake Crust:

For the crust you will need:

  • 1 1/4 cup Graham Cracker crumbs
  • 1/3 Cup melted butter
  • 3 Tablespoons sugar

Combine all three ingredients into a bowl and mix well with a fork. Once all the graham crackers are wet, then you transfer it into the pan of your choosing and pack it down slightly.

Cream Cheese Cheesecake filling:

To prepare the filling you only need 4-5 ingredients.

  • 1 package Cream Cheese softened
  • 1 can sweet and Condensed Milk
  • 1/4 cup lemon juice
  • 1-2 teaspoons Vanilla
  • 1/2 tub whipped cream – Cool Whip (optional)

In order to have a smooth texture the cream cheese needs to be room temperature. If not, then it will lump as you blend the ingredients together. And who wants a lumpy cheesecake?

The Whipped cream is completely optional. I only use it about half the time I make it. What it does is offer a slightly lighter texture and lighter flavor. So if you don’t like rich desserts you will want to add the whipped cream. The original recipe my mom used never used cool whip. But my husband always said it was too rich for him. So I started adding the Cool Whip so he could enjoy a lighter flavor. But when He is on his “no sugar” kick I always go back to making it without the cool whip because I love the richer flavor.

Blend all the ingredients  together until smooth. Then pour into the Graham cracker crust and refrigerate for 2 hrs.

Cheesecake Topping:

To create the illusion of the USA flag, you arrange fresh blueberries in the corner  in a square. Then you place  fresh sliced strawberries  in horizontal lines for the stripes of the flag. No other topping is necessary! It is quite delicious! And makes the perfect dessert for any US/Patriotic holiday like Memorial Day, Veteran’s Day, and the Fourth of July!

Cheesecake Alternatives:

Really any kind of topping would go great with this recipe! I’ve tried Huckleberries, Strawberry pie filling, Raspberry Pie Filling, Strawberry Rhubarb Jam, and if you are a chocolate lover…Cherry Chocolate! For that simply drizzle with chocolate syrup and top with Cherry pie filling. Oh Heaven!

No bake Cheesecake Recipe Cheesecake Crust Alternatives!

If it is Chocolate you like–Fear not! Substitute the Graham Crackers for crushed Oreo Cookies, and sprinkle Oreos on top!

Really the sky is the limit with your topping choices! We have tried all the toppings I’ve suggested to you and they have ALL been a huge success!

I have made them just like this before :) One of the variations I like is using pecan sandies cookies for the crust- yummy and deliciously sinful! I have always added fruits too- and for me strawberries are always my pick, but I am going to have to try the chocolate version now too!

I’ve tried other no-bake cheesecakes before and they just tasted like whipped cream. I tried this one today and it has that signature tartness of traditional cheesecake! Must be that secret ingredient of lemon juice. This was super yummy! TFS

Oh, I'm so glad you ladies like it! It really is my favorite and SUPER easy to make. just make sure you let it sit in the Fridge for about 2 hrs or else it won't set up enough, that serving it will be a problem…it won't affect the taste at all, just how pretty it looks on the plates. lol.
