Paleo Crunch Recipe #Gluten Free, Nectresse Sugar Free and Kid Friendly

In attempting to improve my  health, lose weight and get fit, I've been changing a lot about the foods I eat. Yet I still find a lot of recipes that still call for sugar or other sweeteners that make one's blood sugar spike. And sometimes you just have a sweet tooth that needs attention. So what do you do? You don't want to eat a lot of calories with a luscious dessert. So you turn to zero calorie sweeteners. 

I will tell you up front I hate artificial sweeteners. They may provide a sweetness but I absolutely hate the aftertaste, and depending on the sweetener used they often upset my stomach as well. So I always was discouraged as I could never enjoy a sweet treat without guilt because I could  never eat those zero calorie treats. So I thought, why not give it a try and see if I finally found the one zero calorie sweetener I can enjoy! I used NECTRESSE™ instead of honey in a family favorite Paleo Crunch recipe to lower the sugar content. I was thrilled with the end results as it still tastes delicious and just the right amount of sweetness without adding the calories! Plus, I have not tasted that disgusting aftertaste yet!  Try it out for yourself below!


 

 

Paleo Crunch Recipe with NECTRESSE™

 

Dry Ingredients: 

  • 3.5 cups chopped almonds (natural)
  • 1/2 cup whole almonds (natural)
  • 1 cup pumpkin seed kernels 
  • 1 cup sunflower seed kernels
  • 1/2 cup Chai seeds
  • 1 1/2 cup almond flour (meal) 
  • 3 cups unsweetened coconut flakes
  • 1 tsp cinnamon

Wet ingredients: 

  • 1 cup coconut oil liquid form
  • 1/2 cup honey–I exchanged for 12 packets of NECTRESSE™. 
  • 3 tsp vanilla 

Paleo Crunch With Nectresse

Directions: 

Preheat oven to 300 degrees. 

Combine all dry ingredients and stir until all mixed.

Add the wet ingredients.

Mix well until all dry ingredients are equally coated. 

Spread evenly onto a cookie sheet.

Place cookie sheet into the oven and bake for 15-20 minutes. Take out of the oven and stir. Spread evenly on the cookie sheet and return to the oven for another 15-20 minutes. Repeat this process until the Paleo Crunch is a nice golden color. Remove from the Oven and allow to cool completely. Stirring occasionally will help quicken the cooling process. 

After the Paleo Crunch is completely cooled, place into an air tight container. It will last approximately 4 days on the shelf or longer when placed in the fridge. And now enjoy!

Paleo crunch can be eaten as an tasty on the go snack or as a trailmix snack. It can also be used as a delicious gluten free breakfast cereal and is delicious with milk, almond milk and coconut milk! Another great way to enjoy Paleo crunch is sprinkled on top of Greek  yogurt. Basically it can be used anywhere you would use granola.  

Optional ingredients: You can also add in dried fruit, freeze dried fruit and dark chocolate chunks into the paleo crunch after it has finished baking. These offer variation and definitely keep the kids happy. 

I love that even the kids will eat the Paleo Crunch as a snack, and I can even eat it in small portions on my nutrisystem program since I exchanged the honey for NECTRESSE™!  It is a great low sugar, gluten free snack that the entire family can enjoy whether you are working on weight loss, or just trying to eat all natural and healthier choices. You don't have to follow the full Paleo diet to enjoy this.

That looks like a great recipe for me to try. I’ve never heard of that sweetener before, but then again I am weird and don’t use any sweeteners. (i.e. I like 100% cacao baking chocy lol)

I’d never heard of Nectresse before now – I appreciate that it’s naturally-derived rather than chemical, like many sweeteners. I’d be comfortable feeding it to my family. And your Paleo Crunch recipe looks pretty yummy too!

That looks really good! Nectresse is great, I’ve tried it in my coffee and it’s not quite as sweet as other low-cal sweeteners.

YEAH! you are welcome Melissa! We don’t Have to eat gluten free, but I enjoy it from time to time. It just “feels” better, you know? Plus, I just love nut mixtures, they are such an easy snack. lols.
